Happy #menumonday, friends!
It’s been a minute since we’ve done one of these, and I’m excited to get back in the swing of things now that my kitchen is consistently functional! We aren’t quite finished with the remodel, but we’re getting so close! I can’t wait to share the before and after pictures with you! In the meantime, let’s get back to our menu routines, shall we?
Springtime brings a desire to be outside more often, and while we use our grill year-round, it definitely gets a workout in the Spring. I’m making an intentional focus on eating more fresh veggies during May, so you’ll see lots of salads making their appearances this month, alongside our usual comfort foods. One of my favorite ways to get good veggies in my body is to grill up a tasty meat and add it to a colorful salad. There are so many variations on this and I am here for all of it. I love Spring! Can you tell?
Here is my plan for this week:
- Monday: Asian Grilled Chicken Salad
- Tuesday: Tacos
- Wednesday: Chicken Curry with Rice
- Thursday: Grilled Steak Greek Salad
- Friday: Leftovers or Homemade Pizza (depending on if there are any leftovers)
- Saturday: Taco Salad
- Sunday: Mother’s Day (probably take out from somewhere fun!)
