Happy #menumonday, friends!
We are heading into one of my favorite times of the year. From now until the end of January, there will be all sorts of goodies and celebrations and breaks from school, and birthdays! The next three months are traditionally some of the busiest ones of the year for our family, and are filled with traditions.
This past weekend was deliciously rainy and chilly. I spent a large part of it curled up in a blanket in my favorite chair, reading. Of course, I also had a large mug of steaming hot tea to warm up my insides. I also did some baking, and cooked up some chicken breasts in the instant pot to have on hand for those recipes that call for cooked chicken (like soup!). I love to be in my kitchen when it’s cold outside.
Here’s the plan for this final week of October:
- Monday: Chicken Curry
- Tuesday: Tacos
- Wednesday: Leftovers
- Thursday: Bacon Mac & Cheese
- Friday: Enchilada Casserole
- Saturday: Leftovers
- Sunday: Nachos! (Deviating from Soup on Sunday for Halloween!)
