Happy #menumonday, friends!
I am so sorry for my absence last week. Monday was the first day back to work for me after a busy summer, and with the classroom preparations and professional development meetings, Menu Monday fell through the cracks. We sent our youngest off to England last Monday; she’ll be gone for a year. Needless to say, it was a week of emotional eating. Here’s to not eating my feelings this coming week!
School is back in full swing, which means that we’ll have lots of nights when quick and easy is the name of the game. As much as I enjoy cooking and preparing tasty food for my family, when I’m tired from a long day at work or when we have evening events and have to eat in the in-between times, fast, easy dinners are what I’m all about. As the weather cools down, we will also start to add more soup into our weekly lineup. My favorite day for soup is Sunday. Of course, I’m still hoping for some warm weekend days before it gets very cold!
Here’s the plan for the week:
- Monday: Chicken Piccata
- Tuesday: Tacos
- Wednesday: Leftovers
- Thursday: Chicken Stir Fry
- Friday: Italian Drip Beef Sandwiches
- Saturday: Leftovers
- Sunday: Homemade Chicken Noodle Soup
