Happy #menumonday, friends!
As you probably saw in my post from last week, I had foot surgery a week ago. I’m recovering well, and even was able to make dinner on Thursday (it was a quick and easy one, I promise). True to form, my biggest struggle so far is remembering to take it easy because I feel good and I forget. But, I want this thing to fully heal, which means taking the time to rest and allow my body to recover, even when I know I’ve got a bajillion things to do before I go back to work in 2 short weeks.
Speaking of the end of August, my youngest child is leaving on August 30th for a year-long internship in London. Our meals for the next two weeks will likely include a lot of her favorite meals as we send her off well.
Here’s the plan for this week:
- Monday: Chicken Penne Gorgonzola
- Tuesday: Lettuce Wraps
- Wednesday: Leftovers
- Thursday: Chicken and Veggie Curry
- Friday: Yellow Soup (a creamy chicken chowder colored with turmeric)
- Saturday: Leftovers
- Sunday: quick bite out before we head out for a quick family vacay!
Next week’s menu will be a short one, but it’ll be tasty!!
