Happy #menumonday, friends!
Well, this week will be interesting. Some of you know that I’ve been struggling with a foot injury since October. It’s been a very long process of working with insurance to get the correct imaging, doing PT to try to heal, taking time off to rest, and finally finding the right doctor to give me the right diagnosis and plan of treatment. All that to say, I am having surgery on my toe later today. While I’m definitely a bit nervous, I’m also excited that we seem to finally have a plan forward, and it’s a plan that includes returning to my more normal activities once I’m recovered. Including running!!
Surgery today means I’ll be lying low for the next couple of weeks. Fingers are crossed that I’ll be up and about enough by the end of the month to go back to work! That means it’ll be low key meals around here this week and my plan could easily change to take out or pizza delivery! But, I made the plan before I knew I’d be having surgery, so here it is!
- Monday: Chicken Stir Fry
- Tuesday: Tacos
- Wednesday: Leftovers
- Thursday: Dirty Rice
- Friday: Burgers
- Saturday: Leftovers
- Sunday: Roast Beef French Dip Sandwiches
Most of these meals are ones that my hubby and kiddos can handle, so I’m guessing we’ll stick pretty close to the plan this week! But if not, then it’s here as inspiration for you!
