
Happy #menumonday, friends, and welcome to August!
As a teacher, I have serious mixed feelings about August, especially this year. The 2020-21 school year was long and hard, followed by the shortest summer ever. I plan to soak up and stretch out every last minute of summer as we roll toward back to school.
I spent last week helping lead a summer youth camp in Montana, and it was so much fun! It was such a joy to see my daughter reconnect with her friends from churches around the Northwest, and to see these young people following God. It really gives me hope for the future of our world when I see the love, faith, and compassion that is in these amazing young adults. We also got to play in the lake and have fun in the sun, which was also amazing. It was a great week!
This week, we finally get to celebrate my daughter and son-in-law with a wedding reception almost exactly one year after their private ceremony. It’s going to be a full week around here, so dinners will be quick and easy.
Here’s the plan:
- Monday: Grilled Chicken Salad/Roasted Potatoes
- Tuesday: Homemade Gyros
- Wednesday: Leftovers
- Thursday: Chicken Fajitas
- Friday: Pizza
- Saturday: Wedding Reception Goodies
- Sunday: Nachos
