
Happy #menumonday, friends!
February is drawing to a close and I’m looking forward to March. Usually there are all sorts of Irish Dance performances in March, and I was so hoping that we’d be back to normal after cancelling everything this year. We will get our own private dance recitals this year instead! Can’t wait for the day when we can gather at Shawn O’Donnells and watch our girl perform to live music again. I picked up our corned beef from Costco the other day and was a little surprised at how happy it made me to be planning one small part of our normal celebrations.
On a happier note, my son turns 23 this week, so we’ve got a birthday dinner planned. As always, the birthday boy gets to decide what we have for dinner. It’s a family favorite and I’m excited for Thursday.
Here’s the plan for the week:
- Monday: Chicken Tortilla Roll-Ups
- Tuesday: Pesto Chicken and pasta
- Wednesday: Leftovers
- Thursday: Potato Soup (Gabe’s birthday choice)
- Friday: Burrito Bowls
- Saturday: Leftovers
- Sunday: Nachos
