
Happy #menumonday, friends!
Today is President’s Day, which is a day off of school for us. It’s our last holiday until Spring Break in April, which is coming quickly. My skin is craving the touch of sunshine and warm days and more Vitamin D. I’m looking forward to the shift from comfort foods to summer salads and colorful veggies.
Unfortunately, Mother Nature has other ideas for us here in the Northwest, though. We are in the midst of a winter storm warning and have gotten 3 inches of snow over night, and it’s still coming down. Ugh. I guess I’ll have to try to enjoy the snow for a little while longer. At least it’s pretty.

- Monday: Instant Pot Brisket
- Tuesday: Chicken fried rice
- Wednesday: Leftovers
- Thursday: Breakfast casserole
- Friday: Grilled Cheese and Tomato Soup
- Saturday: Leftovers
- Sunday: Chili
