Happy #menumonday, friends!
Whew! We survived birthday month and now I am ready to being my countdown to Spring.
Unfortunately, our weatherman seems to have other plans for this week. We’ve got a polar vortex coming in. I’m not looking forward to the air hurting my face.
This week brings around another celebration of a different kind: Valentine’s Day! We don’t do big traditions for Valentine’s Day, but it is the anniversary of when my husband and I started dating, so it’s near and dear to our hearts. Usually, we would go out to dinner around V-Day (we usually DON’T do the 14th to avoid the crowds), but we are still under lots of restrictions here, so no indoor dining yet. And with the polar vortex on its way… I think we will stay in and make a nice dinner instead.
Here’s this week’s plan:
- Monday: Chicken Penne Gorgonzola
- Tuesday: Steak and Roasted Veggies (potatoes, brussels sprouts, butternut squash)
- Wednesday: Leftovers
- Thursday: Homemade Pizza
- Friday: Chicken Piccata
- Saturday: Leftovers
- Sunday: Happy Valentine’s Day! Salmon, baked potatoes, roasted asparagus
