Welcome to February!
It’s hard to believe that we are already one month into 2021. With three January birthdays, January seems to go quickly in our house. Which is probably a good thing, because the weather is always a bit dreary. Raise your hand if you’re ready to skip the rest of winter and go directly to Spring!
I make a practice of looking ahead (we live by the Boy Scout motto around here: Be Prepared), and it struck me that there’s only 9 weeks until our Spring break! Wow! Spring really is right around the corner. And while I can’t wait for more dinners on the grill and food that feel like Spring, my body reminds me that it’s still Winter around here, craving soups and stews and bread. Hopefully we can find a happy medium this month!
Here’s the plan for the week:
- Monday: Homemade Mac and Cheese
- Tuesday: Tacos
- Wednesday: Leftovers
- Thursday: Chicken Curry
- Friday: Spaghetti with Meatballs
- Saturday: Leftovers
- Sunday: Nachos
