
Happy #menumonday, friends!
This will be our first full week of school, since last Monday was Labor Day. I’m settling back into the routines of Fall and looking forward to more Fall-ish dinners. Fresh roasted veggies are a wonderful addition to any Fall menu. And, as I mentioned last week, I’m planning to make soup at least once a week this Fall. I did this last year through the Winter and my family just loved it. Soup is so easy, fun, and adaptable. I love how I can easily add more ingredients to make it go further. Add some crusty sourdough bread, and I’m in heaven!
One thing that saves my bacon during the school year is grocery pickup/delivery. I SO wish it had been an option when my kiddos were little. Even though they are grown now, I’m busy enough during the week that I order my main groceries and then just hit the store for little things (like snacks!) during the rest of the week. This routine of meal planning helps me know what I need to order and what I already have on hand.
Here’s the plan for the week:
- Monday: Chicken Burrito Bowls
- Tuesday: Chicken Tortilla Roll Ups
- Wednesday: Leftovers
- Thursday: Burgers
- Friday: Chicken Curry
- Saturday: Leftovers
- Sunday: Chili
