
Happy #menumonday, friends!
Today is Martin Luther King, Jr. day, which means that I have the day off of work. It was nice of Dr. King to have a birthday on the day before mine so that I almost always get a 3 day weekend for my birthday! Last week was super weird; we had a major windstorm come through Tuesday night and Wednesday, and we ended up having weather related school cancellations for two days! Since I don’t work on Fridays, that means I will have had nearly a week off!
We are in the second half of January, and will soon be back in the thick of more birthdays, but this week is our “in-between” week, and I’ve got some yummy things planned.
Here’s the plan:
- Monday: Roasted Chicken & Veggies
- Tuesday: Lasagna
- Wednesday: Leftovers
- Thursday: Steak & Veggies
- Friday: Homemade Pizza
- Saturday: Leftovers
- Sunday: Beef Stew

When you say veggies-do you do a variety of fresh veggies or do you mean a vegetable salad, or ?

Hi Mel, great question! For both “veggie” references this week, I’m referring to roasted fresh veggies, which can be anything you like! We are having roasted potatoes, broccoli, and mushrooms with the chicken and roasted asparagus with the steak!
