
Happy #menumonday, friends!
This week will bring us the start of a new year. I don’t know very many people who are sad to see 2020 go. I’m sure hopeful that 2021 will bring more hope and joy than 2020. Of course, there were moments of happiness and joy, but we are hopeful to be moving forward in 2021.
Around here, we like to close out the year with comfort food. One of my goals for January is to get back to incorporating more fresh veggies into our weekly meals. It seems so hard in the winter; veggies aren’t as fresh, and they don’t grow in my own garden in the winter months! My taste buds and emotions definitely gravitate to easy and comfortable during the cold weather. I’m still doing soup once a week, so that helps with the comfort food part!
Here’s the plan for the week:
Monday: Stromboli (this was on the plan a couple of weeks ago, and we didn’t get around to it)
Tuesday: Chicken with Roasted Veggies
Wednesday: Leftovers
Thursday: Homemade Pizza
Friday: Potato Soup
Saturday: Leftovers
Sunday: Chicken Curry
